You can create and set up tax rules under the “Payments & Purchases” tab in your Booth Options (Edit Booth options under the “Sell on Bonanza” menu in the top left corner of most Bonanza windows) after you log into your Bonanza account.
Tax rules can be set for different states or different zip codes (since some cities have their own sales tax in addition to the state sales tax levy). You can also apply the sales tax to the shipping amount if you want to or if your state requires that you do that.
Once the tax rules are set, a buyer will be charged the appropriate sales tax based on their shipping address. It is up to you to handle the collected tax and forward to your state/city entity.

Be aware that your tax rules are NOT applied when you receive an offer for less than your listed amount from the buyer. You should factor in any sales tax you will have to report/collect when accepting or countering an offer. For example, if a buyer offers you $75 for an item listed at $100, and sales tax applies to the purchase, Bonanza will NOT add the sales tax to that $75 at checkout. You will have to pay the sales tax out of the $75, reducing your earnings on the sale.
