I am interested in setting up several different shops to sell different items. One for my photography, one for my arts, one for my vintage, etc. Is this possible?
I think I would get more customers that way.

yes, but you will need a different email and login ID for each booth. (I have 3 right now…there are several that have more)
Once you have a different email/ID then open the booth just like you did the first one….and no you cannot transfer listing from one to the other, but you can copy them over
