Does anyone know why in my sent messages some are highlighted and have an envelope next to them? I’m wondering if that means the intended recipient hasn’t read them.

Yes.
That envelope icon means the message has not yet been looked at.
But,
The recipient also receives an E-mail at the same time and
may have read IT, but not your message, and
that would not have effected the envelope.
