Latin name: Cyperus esculentus ssp. sativus

Tiger nut is a perennial, herbaceous plant that grows up to 60 cm (23.5 in) (rarely up to 100 cm (40 in)).
It forms long, underground runners with bulbous swellings with a diameter of up to 15 mm (0.6 in).
The brown, round, pea-sized, high oil-content tubers are edible and traded in Southern Europe and West Africa.
The tubers are known as Amandes de terre in France and in Spain Chufa.
The taste of the tubers reminiscent of hazelnuts or almonds.
They contain a lot of unsaturated fatty acids such as linoleic acid, Vitamin H and rutin as well as many minerals.
