Comtesse du Barry whole foie gras is made from IGP Southwest duck. Cooking thoroughly: its texture evolves over the years, as the foie gras absorbs its own fat, becoming more unctuous with age. Preparation instructions: Place the foie gras in the refrigerator the day before. Be sure to remove it only 15 minutes before serving. Slice at the last minute. All Comtesse du Barry products are free of coloring and preservatives and would therefore develop a slight graying upon contact with air without affecting the taste. Serving suggestions: As a starter: slice 125g of foie gras into thin shavings. Peel 2 pears and slice them lengthwise. Arrange salad leaves dressed with oil and balsamic vinegar (optionally truffle-infused). Top with foie gras shavings and pear pieces, and sprinkle with a pinch of fleur de sel (optionally truffle-infused). Add a few thinly sliced ??Parmesan shavings. As an appetizer: Serve on plain or fig toast (as you prefer), accompanied by a confit and/or chutney (fig, onion, mango, Sauternes, etc.).
