Best known for its apple-like crunch and versatility in both raw and cooked dishes, it grows as a vigorous climbing vine requiring full sun, moderate watering, and a long warm season to mature. With tan skin and fleshy white roots, it remains unique among legumes, as only the tuber is edible while the seeds and pods are toxic
