From La Mancha region in Central Spain, it is made using the milk of the Manchega sheep, it is easily
recognized by its resembled by the herringbone pattern on the rind. Aged for 12 months, this version is
semi-firm in texture, pale in appearance, with a pleasant nutty and caramel-like flavor.
