Senshu Kinukawa Mizu is a
rare and treasured Japanese heirloom eggplant, cultivated for centuries in the
Senshu region of southern Osaka. Known for its exceptionally high water content
and delicate skin, this variety is celebrated for its use in traditional
Japanese pickling and summer dishes.

melongena
Other Names: Senshu Mizunasu, Kinukawa Mizu, Water Eggplant
Days to Harvest: Approximately 60?70 days from transplant
Plant Height: 24?30 inches
Leaf Color: Medium green
Fruit Size: 4?5 inches long, plump and rounded
Fruit Color: Pale green to glossy purple depending on strain; skin may
dull slightly when pickled
Flavor Profile: Mild, sweet, and juicy with almost no bitterness. The
flesh is so tender it can be eaten raw, though it?s most often enjoyed pickled
in rice bran or lightly seasoned brine.
History and
Interesting Facts:
?Mizu? means water in Japanese, reflecting the eggplant?s high
moisture content.
Cultivated in Senshu since the Edo period, it was traditionally
grown near the sea where humidity and temperature favored its development.
Farmers once planted these eggplants at the edge of fields to
rehydrate during work?squeezing the fruit would release water.
Due to its thin skin, it?s not suited for long-distance
transport, making it a local delicacy.
The variety was later improved to produce brighter skin tones
and better shelf life, helping it gain national recognition.
How to Grow Eggplant
from Seed:
Start Indoors: Sow seeds 8?10 weeks before last frost.
Use a heat mat to maintain 80?85F.
Germination: Expect sprouts in 7?12 days. Thin seedlings
and transplant into small pots.
Transplanting: Move outdoors when nighttime temperatures
stay above 50F.
Spacing: Plant 18?24 inches apart in full sun.
Soil Fertilizer: Use fertile, well-drained soil
with compost. Avoid over-fertilizing to preserve flavor.
Watering: Keep soil consistently moist. Mulch to retain
warmth and moisture.
Harvesting: Pick fruits when firm and fresh. For
pickling, harvest slightly immature fruits with glossy skin.
